Thanksgiving celebrations

We were super lucky to get to celebrate Thanksgiving while Mom & Dad were here. Obviously it's not an Aussie holiday, but it can be hard to get some of the ingredients you usually associate with a Thanksgiving meal too. For example, whole turkeys are a special order, American pumpkins are a rarity, and pumpkin pie is pretty much unheard of.

So we decided we'd make a Thanksgiving meal as close to the real thing while using the ingredients we could get and while being vegetarian. Our menu ended up being:
  • Spinach & pinenut ravioli on seasoned pumpkin (leftover from my David Jones can)
  • Roasted green beans
  • Roasted sweet potato with cream cheese & spinach topping
  • Pea "casserole" - made without condensed soup but baked up as best as we could
  • Rolls
  • Sautéed prawns (for Mom & Dad - to add an Aussie twist)
  • Pumpkin cheesecake (made from my can of pumpkin procured at David Jones a few weeks ago for a measly $12)
We actually made Thanksgiving dinner on our Wednesday night, which made it like 2 days before the actual Thanksgiving. But it turned out pretty good, even if it wasn't quite the usual menu or day!

A couple days later, we went over to Esther and Andres' new apartment for veggie paella. They said it was a Thanksgiving one for us, which was super sweet!

Mmmm...delicious!
It was a super fun night! By far the best Spanish Thanksgiving dinner we've ever had!
And on the way home that night , we saw this little Thanksgiving treat.

Oh Australia, I love you!
